Taco Family Night!

So last night dinner was a fun dinner..Taco Tuesday? Nope. "Taco Wild Wednesday" I'll get in to more depth with the title in just a moment. The girls for days wanted tacos for dinner...i couldn't say no to one of the no-hassle dinners. Easy to prepare and easier to clean up..only when using paper plates! I went food shopping the other and came across the Old El Paso Taco Dinner Kit (AMAZING!!) I added a few of my favorite toppings for the tacos in the picture below. Dinner was so much fun especially for the girls, I love cooking with my girls only if they follow direction...lol Other then that making dinners like this hands on is really fun, our kids feel more involved in the kitchen. I hope i can make more kid-friendly meals with the girls in the future cause they seem to enjoy it..

I warm up the taco shells in the micro-wave for about 40-45 seconds

I then cooked and seasoned the ground beef.

Our Taco Buffet

The girls got a chance to make their own tacos.

Seems like they really enjoyed it!

Taco Wild Wednesday was a huge mess!...I mean success!

HAPPY BIRTHDAY AMELIA!!

Yesterday was a special day for a little girl...she turn a whole hand, 5 years old Amelia. She was pretty excited for months now and i believe it had to with the fact that she is having a "Spooky" theme party this weekend. I have been her mother for 5 years now and I enjoyed every year with my little baby who is no longer a baby. She just keep getting smarter and smarter each year, there's just no words that can describe how I feel every year my kids get older. All I think about is how grateful I am to be able to hold them another year, to kiss them good-night another year. I am grateful for all the whining and crying, for the laughter from when my girls do or say funny things.  Nothing warms my heart then to know I could wake every morning with my girls in my bed.
Hearing their voices and how much they love their mommy makes my heart melt. Just to watch every milestone in their life gives me hope, which is why I am a big believer in prayer...I pray every year for my blessings which are the ones that I love. Every child is a child of God, who protects them anyway He can. We may not agree with some of His protective ways and we may thank Him for his protective ways. I have many fears for my girls just like every parent does but i do thank Him each year for their life. Being a parent means putting their needs before your own, if its freezing outside you give them the only coat you have to keep your child warmer. Parenthood is not all candy and cookies, its hard work and rewarding at the same time. So for Amelia's birthday I went to her class with cupcakes and her classmates sang "Happy Birthday" Later that day after dinner, I had asked daddy to get Amelia a cake and he got her an Oreo ice cream cake. She loved every minute of her special day and no matter how many "bad days" I get with just her happy high pitch scream it's a reminder that I am doing my job just fine. I love you baby girl wish you nothing but the best in your future and I will be by your side no matter what.

Where have i been!!..

Hey my blogger readers!

I know i haven't been writing in months but i have great news!...IM BACK! A lot of stuff has happen since my last post and i was also busy busy planing my little sister her very first baby shower! I was so excited to do it for her just a little downside, not everything that i have planned came out the way i wanted, but all that matter was that my sister was smiling all night. Keeping a big secret like that from the one person i share all my secrets was pretty damn hard. Last time i wrote on the blog was about the girls Spring Break Vacation week (if you haven't read about thatclick here) that was two months ago. Wow! a lot has happen school trips, mothers and fathers day, a day out with mommy, birthdays, my sister's baby shower and an indie wedding. Sometimes life takes you where one least expected and so far i haven't had the time to sit down in front of my computer and type. So here are a few highlights of the months i haven't posted anything....lol

Spring Break Vaca Day 6 "Making Cookie Meaning Day"

The girls and I did something out of the ordinary. Our Saturdays are usually me being the last one to wake up or the first one to wake up to get ready for work. This Saturday I had a plan for the girls to do for Easter and I had to be at work that afternoon. It was a crazy day for me but the girls were going to enjoy and they did. The plan for today was a cookie-decorating class and we went to the east side of the city to a place called Make Meaning

The place is a craft store for children and adults  to create different things. The cookie-decorating class was a last minute thing I decided to do the day before. After so many local buses to exchanged I managed to make it the city in the express bus on time. The girls had a blast at the place, they socialize with the other kids and had so much fun putting their creative side in the cookies. As yummy as it look I was very surprised at their work, I help a little but the rest was them. We fell in love with the place we wanted to do more stuff but we had to go and i didn't want to be late for work. To end the night hubby and I went out to the city for a date night while the girls had a sleepover. I'm not all about sleepovers unless it's with family, this sleepover was with hubby long time friend. She has a daughter the same age as Amelia and the beautiful thing about this little girl is the minute the girls are together its like they are cousins. The ended well and the adventure still continues till tomorrow so...

Spring Break Vaca Day 3 "Broadway Show Day"

Today was the biggest surprise for the girls today. The plan for today was to see a Broadway musical show, which better than Cinderella!!! with Fran Drescher and Carly Rae Jepsen. The girls were very tired but excited to see the show, I guess because of the Disney story of Cinderella that they know not the Broadway version.  This morning I didn't get to clean up the house only because I was a little moody and tired from yesterday's work oh I also got the "time of the month".  When we women get our period its kinda like an off switch to our mood...everything bothers us and it makes everything we do around our surroundings so frustrating.  My mood today was off because the girls woke up extremely early.. well Jojo did and then Amelia. I was not ready to deal with children at 7 am especially on a vacation day, as a mother I shouldn't say that but as a human being its the truth. I thought maybe if I turn on the t.v. in my room (yes I do have a t.v. in my room for those days when its just me and the girls at home) maybe just maybe the girls would stay in my bed to watch t.v. while I rest for another hour. Yeah that didn't last long only one episode of Doc Mcstuffin and they were out of my room playing. Ok I got up made breakfast,  printed out our reference to pick up our tickets then i read that we had to be at the theater an hour before the show, it was 11 and I had 2 hours to get ready to be downtown by 1. That didn't sound to appealing it sound more like chaos rushing the girls to get ready and be at theater at 2.

As i mentioned in my pass blog about transportation, in the city we have local buses and express bus that travels from one borough to another. So desperate times calls for desperate measures, we took the express bus, its cost us triple the price of the local bus fare. We got to the theater, sat in our seats while we waited for the show to began. Lets keep in mind most Broadway musicals are about 2 hrs long so I was proud in keeping the bathroom breaks down pack and snacks only because I brought our own made lunch from home. This was the girls first Broadway show and my second (my first show was off Broadway a class trip many many years ago) so the girls didn't know what to expect. As tired as they were, they skipped nap-time, they really enjoyed themselves.  The show was amazing and funny, its a show you never expected certain part of the story to happen which makes it unique.  We laugh a lot and clap a lot despite all of that I too enjoy myself, Jojo was so into the story and Carly too. Amelia on the other hand was busy keeping herself awake didn't work cause she took a nap on my shoulders.

The experience was memorable cause all I kept thinking to myself that this was something my mother (who is no longer with us) would wanted us to explore different things with our children. And the fact that she admired Fran Drescher in the show "The Nanny" to now being able to see Fran in person then share it with the girls just made it even more special. To me its hard doing these adventures with my girls without my mother because she wanted to take us to do these kind of adventures that we are doing now with own children. I know if she was still with us she would have enjoyed school shows, graduation,  birthdays and family vacation trips. But the funny thing about all of this is that its exactly what she wanted for us to do with our own kids, is to have these experiences as they got bigger. I love her for teaching us that no matter who we become in life never forget where you started from. So our adventure continues tomorrow and I want to apologize if these post are late its just that I feel more free writing when everyone is asleep. If you are following us on our Spring Break vacation blogs I really appreciate you taking the time to read about the girls experience.

Time flies when your having a BIRTHDAY!!

Today is a little girl special day...its her birthday!  My not-so-baby-anymore daughter turns 6 today and sadly I had to work. When I look back at the first time we lock eyes I knew the rest of my life would be a journey that I would be forever thankful for. Joannelly is the most amazing little girl I could ever ask for (yes I know every parent says that about their kid) and let me tell you why. When I first found out I was pregnant with joannelly I wasn't scare of being a mom, I was scare of being a mom without my mom there to help me. My mom passed away back in 2003 when I was only 16. But Joannelly changed that for me and made me realized mom was within me (sounds creepy I know) i'm not talking about supernatural, im talking about paternal instincts.  Every milstone I went through with Joannelly I felt like I was like my mother, I would start acting, talking and walking like my mother..now thats creepy!!. And that is why Joannelly is amazing. I love my girls and I thank the Lord not only everyday but every year on their birthdays that they are alive and healthy. I also ask the Lord that every birthday is not their last and that I may live long enough to see them have their babies and help them physically.  So a big HAPPY BIRTHDAY to my first baby JOANNELLY! ! Don't ever let anyone fear you from being who you are and "LET IT GO!!" Mommy and daddy loves you forever and ever because you became my fairy happily ever after.

Valentines Day ideas for kids

Valentines Day is tomorrow. I had some ideas for the girls classmates and teachers. It's not much to show but its enough to show that we care for them. I do these crafts only because i like to do them not because i have to. Every year on Valentine's Day i believe in celebrating the holiday not just on February 14th but every single day. I also believe that the holiday was intended as a reminder to us that we need to put a hold on our busy lives to remember the ones that we love and care for. From what i can remember back in elementary school and middle school, i felt like i wasn't loved by my classmates or anyone in school...yeah i was very emotional child then i realize it really didn't matter. All the chocolate was going to be eaten and the flowers, balloons were going to died or pop. The moment i had  my children i knew what love really meant to me. So even if your not in a relationship or don't believe in Valentines Day, it's important to be reminded that someone does love you without the flowers and chocolates but just the way you are. Well here they are:

Do you celebrate Valentines Day? What are your inputs on my idea of Valentines Day?

Snowy Days 2014

There's no better way to survive this crazy weather in NYC with some games and crafts. Last night was winter snow storm and thank God hubby was already home. It started around 10 am and kept going all night. This storm wasn't as bad as the one we had in December 2013. However, the girls and i kept busy inside our apartment "nice and toasty" as Amelia puts it playing games. We also did arts n crafts, thank goodness these were Christmas gifts from my aunt and uncle. We discover a new game its really fun once we kept play the game over and over, Amelia loves it. There are other ways to active at home with our kids to be away form any storm not matter what it is, they can do the following:
  1.  Help us clean up their room
  2. Help prepare lunch or dinner
  3. Play pretend
  4. Make it a movie day: watch their favorite movies and ask them questions about it
  5. Find new food recipes to try

Whats your favorite thing to do with your little indoors on a stormy night / afternoon??

Queens Farm Fall Family Fun

Hey Bloggers

We went to the Queens County Farm and it was pretty enjoyable.  We went with my older sister, her friend and the girls cousins. Our plan for this adventure was to do the corn maze but I wanted to the pumpkin picking. We did the maze and boy I didn't expect us to take about an hour and forty minutes to get to the end of this corn maze but we did. We were  exhausted and excited that we reach the end. I didn't think doing the maze would take up too much of our time so we ended up getting our pumpkins in the shop. The day ended with a ride back home asleep.

I hope you enjoy these pictures and until the next blog...

Monster High Cake!

Yesterday was my second cousin's birthday party. The theme was Monster High but she wanted a replica version of Draculora Sweet 1600th birthday cake. And i did just that! With some of my knowledge of cake decorating i put all my effort into this cake. The end results was that the birthday princess was happy and she loved it. I took about 12hrs of no sleep and mulitple breaks (because of the kids) to make this cake. Im not a professional or experince baker that i can do any cake less than 12hrs with no breaks.

I wanted to use cake box mix just to avoid getting stress out and it saves time. However, what i did was i added 3/4 cup of flour just so that the cake is not completely moist and easier to work with when working with layered cakes. I made homemade cream cheese frosting n try to make frosting to crumb coat my cakes before i put fondant. When crumb coating a cakes means that you are covering up the cake with frosting that way your not dealing with loose crumbs. Fondant is a edible clay made of marshmellow and sugar powder, its used to create figures and whatever design one comes up with.

What do you think about the cake? its one of the cakea ive made so far and im proud of the cakes i recently made. I greatful i started within family and now i have people reaching out to me about my cakes! Who knows maybe i see a business in the future..

Until the next blog!..

Birthdays and Cakes!

Hey Bloggers!

This past two weekends were filled with birthdays, mostly family members. My sister's birthday and three of my cousins as well. The Saturday of my sister birthday weekend, my sister and I along with her best-friend and our cousins went to the city to celebrate. The music was great, the view was amazing a three floor club, where you are thinking "wow I never seen this place before" its called "Ludlow Manor" down on Delaney Street on the lower east side. The place was fascinating, each floor had a different theme. The second floor looked like a 1920's casino theme and the third floor was more like a tropical forest.

The following weekend was my little cousin surprise 8th birthday. Her birthday theme was "Teen Beach Movie" I was so honor to do her birthday cake when my aunt ask if I can do the cake. Everyone in the family knows I like to bake so to make this cake was a challenge for me only because the last time I use fondant was for Jojo's 4th birthday where I wanted to make a Barbie doll cake. The fondant was not my friend that day so when I said yea to making my little cousin's birthday cake I said to my self "I'm going to make this cake as easy as possible" Everything seen here was not made from scratch because I was more into decorating then actually making everything from scratch.

I use the Duff Goldman Fondant which was pretty easy to use compare to all the home-made fondants I made. I bought this one at Michael's for $21.99, on the Duff website is actually more.

It was fun celebrating my sister and cousin birthday; I had so much fun making this cake that all was well with birthdays and cakes!

Until the next blog!
